Before we dive into all the reasons you need to try this brussels sprouts salad, let’s talk about the crazy weather in Seattle for a moment. It snowed this past Friday, you guys! Not the snow that “disappears as soon as it hits the ground” kind of snow, but a few inches of snow. I’ve been living in Seattle for a few years now and have never experienced anything like it. Oh I saw plenty of snow when I lived on the east coast, but this was a pleasant surprise for Seattle. I savored and enjoyed every minute of it. Sadly, it only took a couple days for it to melt away but it was truly a wonderful site to wake to everything covered in a beautiful white bed of snow. And we *might* possibly be getting some more this week!
The wonderful thing about a cold snowy weekend is that it’s perfect to catch up on blogging and making delicious meals at home. I posted this salad a few weeks ago on Instagram and finally got a chance to add it to the blog. Why? Because I’m a newly converted fan of Brussels sprouts after disliking them for a majority of my life. And I think there are many out there like myself. This salad is so quick and easy to make (especially if you have a food processor) and is packed with flavor from real, clean ingredients.
Benefits of Brussels Sprouts
So why even bother with brussels sprouts? Brussels sprouts are a great source of fiber, loaded with over 20 essential vitamins and minerals, may have cholesterol-lowering abilities, and may offer cancer-preventative components. It’s so important not to overcook these cruciferous vegetables. Not only does overcooking cause them to lose their nutritional value, it also leads them to emit that unpleasant sulfur smell.
This recipe doesn’t require any cooking. It’s very simple and quick to pull together. It’s perfect for this time of the year as all of the ingredients used are seasonal and fresh.
