A delicious gut healthy power bowl to fuel you through the day. Made with carrot kraut, massaged kale, fresh pear, black beans, and so much more. This satisfying bowl is not only packed with fiber and nutrient-rich ingredients but also makes for a delicious meal.
On medium heat, drizzle some avocado oil onto a medium sized pan. Add the sweet potato ribbons (or cubes). Coat the sweet potatoes with the oil and cook until soft.
In a large bowl, massage the olive oil into the kale until the kale is soft and shiny. This usually takes about a minute.
In two bowls, separate the massaged kale, avocado slices, carrot sauerkraut, black beans, cabbage, and cooked sweet potatoes.
Drizzle with the dressing and enjoy.
