Roasted cherry yogurt bowls take the everyday yogurt with fruit to a whole new deliciously indulgent level. Whether it’s for breakfast, a snack or dessert, seasonal roasted sweet cherries spooned over a bowl of thick yogurt and topped with crunchy granola is pretty much unbeatable.

Roasting cherries caramelize and intensify their natural flavor, creating a nice, gooey and fragrant syrup. And the cherries stay more intact roasted in the oven than they would if you were to simmer them on the stove.
The process is simple: pit and slice into halves, toss with a few simple ingredients and roast until caramelized.
It's all about the cherries
When it comes to this yogurt bowl, the real star of the show are the fresh Northwest sweet cherries. There are a few other additions to turn them into a sinfully delicious treat: lime juice, vanilla extract, coconut oil, sugar, salt, yogurt, granola, and honey.
You’ll also need a cherry pitter. These are worth the investment and will make any cherry dish so much easier to make. Don’t have one on hand? You can also pit cherries with a straw (I prefer a metal one) by simply inserting the straw where the stem attaches to the cherry. Push through until the pit pops out.

Step 1: Preheat oven. Preheat oven to 400° F and line a baking sheet with parchment paper.
Step 2: Prepare the cherries. Pit the cherries and slice each one in half.
Step 3: Make the cherry mixture. In a medium-sized bowl, combine the cherries, lime juice, vanilla extract, sugar, salt, and oil. Mix well.
Step 4: Spread on baking sheet. Spread onto a parchment-lined baking sheet in an even layer.
Step 5: Bake for 18 minutes. Remove from the oven and allow to cool for 5 minutes before transferring to a bowl.
Step 6: Assemble yogurt bowls. To make the yogurt bowls, serve cherries warm over yogurt with granola and a drizzle of honey. Enjoy immediately.
Step 7: Store leftovers. Store leftover roasted cherries in a sealed glass container in the refrigerator for up to a week.
How to store leftovers
Cool roasted cherries down completely before storing them separately in an air-tight glass container in the fridge for up to a week.
When ready to enjoy, reheat cherries in the microwave or on a skillet until warmed through. Assemble yogurt bowls when ready to serve.
Tips and ingredient substitutions
Here are some ways to make these yogurt bowls your own and the best every time:
Fresh cherries. I recommend using Northwest-grown cherries. They’re sweet, fresh, juicy, seasonal, and delicious. I don’t recommend using
Lime juice. The cherries are naturally sweet so the lime juice will balance that delicious deep flavor. If you don’t have any lime juice on hand, lemon juice works just as well.
Sweetener. While the recipe calls for cane sugar, you can also use honey, maple syrup, coconut sugar, or brown sugar.
Homemade or store-bought granola. You can use homemade or store-bought granola. If you don’t have granola, chopped nuts, such as almonds, pecans, or walnuts, will taste great too.
Dairy and non-dairy yogurts. While the recipe calls for plain Greek yogurt, you can use any kind of yogurt, including non-dairy yogurt, based on your dietary preference. Use vanilla-flavored yogurt for added sweetness.
