Combine coffee (or espresso), milk, pumpkin puree, pumpkin pie spice, vanilla extract, sweetener, and salt in a blender. Blend until smooth and creamy. Taste and adjust sweetness, if needed.
Pour into a glass with ice and top with whipped cream, if using. Sprinkle with a pinch of pumpkin pie spice and serve

If using non-dairy milk, try using almond milk, cashew milk, oat milk, hemp milk or coconut milk.If you don't have pumpkin pie spice on-hand, add ¼ teaspoon cinnamon and a pinch of each ground ginger, ground nutmeg, and ground cloves.
