This avocado toast with pesto is made with a well-toasted slice of bread slathered with creamy pesto and topped with half of a "pixelated" avocado and toasted sesame seeds. It's easy-to-make, delicious, and the perfect snack!
Pit and peel the avocado. I use half of a small avocado for this recipe but if you have a large avocado, you may want to use a quarter. If you want an artsy look, pixelate it by using a sharp paring knife. Otherwise, just create slices.
Make your avocado toast! Slather the toast with a layer of pesto. Top it with the avocado slices. Sprinkle with the toasted sesame seeds or hemp seeds and garnish with mint.
