I can eat a raspberry crumble bar for breakfast, as a mid-day snack, or dessert. It's an easy treat that perfectly balances tart and sweet flavors.
The crumble topping doubles as the top and bottom crusts. Between is a gooey and delicious raspberry filling.
After trying these, you can also make a mixed berry or cherry version. They're delicious and simply summer in a bar.

- Brown sugar
- Rolled oats
- Baking powder
- Salt
- Butter
- Pecans

How to Make Raspberry Crumble Bars
The following are the steps and process images to make raspberry crumble bars. Refer to the recipe card for the complete set of instructions.
1. Prepare the baking pan. Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving a 2-inch overhang on at least two of the sides for easy removal. Set aside.
2. Make the crumble mixture. In a large bowl, combine the rolled oats, flour, brown sugar, baking powder, and salt. Add the butter and mix until the dry ingredients are evenly moistened and crumbly.
3. Prepare the topping. Transfer 1 cup of the oat mixture to a separate bowl. Stir in the pecans and set aside for the topping.
4. Prepare the crust. Press the remaining oat mixture firmly and evenly into the bottom of the prepared pan. Bake for 10 minutes to set the crust.

5. Prepare the raspberry filling. In a medium bowl, gently toss the raspberries, lemon juice, sugar, flour, and vanilla extract until the berries are evenly coated.

6. Assemble the crumble. Remove the crust from the oven and spread the raspberry filling evenly over the top. Evenly sprinkle the reserved pecan-oat mixture over the filling. Spread and fill the corners. Evenly crumble the remaining oat mixture over the top.

7. Bake. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
8. Cool and serve: Let the bars cool completely in the pan on a wire rack. Once cool, lift them out using the parchment overhang. Slice into 16 squares and serve.
