Thanksgiving is right around the corner, you guys! If you’re looking for delicious salad ideas, I’ve got your back. I made this by Autumn Jewel Salad with loads of greens, apple, pomegranate seed jewels, fresh broccoli, red onion, and pecans. It only takes around 5-10 minutes to make. It serves as a great side or dish on its own — I find myself eating this for breakfast sometimes. It’s a light refreshing salad, the perfect counterpart to all the heavy deliciousness that comes with Thanksgiving.
Speaking of Thanksgiving, I hope you’re all excited about it as much as I am. Growing up in an Indian household, we never really celebrated Thanksgiving. However, once I moved to the east coast, some of my friends would invite me to spend Thanksgiving with their families, which I really appreciated. I loved how family and friends would all come together, bake and cook amazing meals, and give thanks for what we call life. The food was always so delicious, and even though I was a vegetarian, I’d find a plethora of options with all of the delicious sides, pies, and appetizers. It was always amazing.
While I loved the beautiful meal, an hour after indulging in all the food, I’d find myself suffering from severe food coma. You know…the kind that makes it hard to even get to the couch. And once you’re on it, to actually get off of it. I was never the only one so while it wasn’t the best feeling, I knew we were all in the same boat. Hours later, I’d feel let down with myself for letting myself go to an extreme where I’d feel awful for the next 24 hours. Why couldn’t I enjoy all the goods in moderation, I’d always ask myself?
Since then, I’ve come a long ways. My relationship with food has changed so much. I still enjoy all the deliciousness that makes Thanksgiving what it is today, a very special holiday. However, now I start with the healthy side of the table. I load up on all of the delicious salads and then I slowly work myself to other parts of the table. I still enjoy all of the food, but in moderation. No, I don’t deprive myself of this special occasion, but I observe how I’m feeling throughout the meal. Now I enjoy Thanksgiving so much more because it’s no longer the holiday where I won’t be able to move for a day after that big meal. I won’t fall off the wagon and spiral downwards because I took proactive steps to be more mindful of what I was putting in my body.
As you come up with your menu this year, or maybe you’re trying to decide what to take to your family’s house, take a moment to think about how you want to feel after the meal. Use real food, fresh ingredients, and create enough balance so you have room to both indulge and still be respectful to your body. This salad is not only appealing to the eyes, but also delicious and healthy. The pomegranate jewels add crisp and flavor with every bit while the broccoli and greens doing their work.

Autumn Jewel Salad
This Autumn Jewel Salad is made with loads of greens, apple, pomegranate seed jewels, fresh broccoli, red onion, and pecans. It only takes around 5-10 minutes to make. It serves as a great side or dish on its own.
- 4 cups fresh greens I used spinach for this post
- 1/2 cup pomegranate seeds
- 1/2 cup chopped pecans
- 1 red onion peeled and chopped
- 1 apple thinly sliced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon fresh squeezed lemon
- sea salt and cracked black pepper to taste
- 1 cup broccoli florets chopped
Add all of the ingredients to a big bowl, including olive oil, sea salt, and cracked black onions.
Toss until the salad is well coated. Serve.
