Gluten-Free Sweet Potato Pancakes

These delicious flourless vegan sweet potato pancakes are made them from sweet potatoes, apples, oats, and a few other ingredients. So quick, delicious and filling!

  • 1 roasted sweet potato mashed
  • 2 tbsps coconut oil
  • 1 egg use 1 chia egg if vegan by mixing 1 tbsp of ground chia seeds with 3 tbsp of water
  • 1 tsp vanilla extra
  • 1 cup apple sauce
  • 1 cup old fashion rolled oats
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup coconut milk


  1. Place the oats into the bowl of your food processor. Pulse the oats until they are ground into a powder-like consistency. You can also use a high-speed blender if you don't have a food processor.
  2. Bake the sweet potato for 30 minutes on 400F or microwaving it for 3-4 minutes. Be sure to pierce sweet potato skin 4-5 times with a fork before placing it in the oven or microwave. The sweet potato should be tender.
  3. Peel and mash the sweet potato in a big bowl.
  4. In a separate bowl, make a chia egg by combining 1 tbsp of ground chia seeds with 3 tbsp of water. Otherwise, use an egg.
  5. Combine all ingredients in a bowl and stir until nice and creamy. Or mix in a blender for 30 seconds. Don't over-blend or else the sweet potatoes will become gooey and gummy-like.
  6. Once the batter is prepped, turn on a skillet to medium heat and coat with coconut oil.
  7. Use 1/2 - 1 cup of batter per pancake based on size preference. Flip once you start to see bubbles forming in the batter.
  8. You can keep the pancakes warm by sticking them in the over at 200F while you make the remaining pancakes.
