    Avocado Toast with Pesto

    Avocado toast with pesto

    Thispesto avocado toast is made with a well-toasted slice of bread slathered with creamy pesto and topped with half of a "pixelated" avocado and toasted sesame seeds. It's easy to make, delicious, and the perfect snack!

    If you follow me on Instagram, you've seen this toast on my feed a number of times. That's because it's so tasty and easy to make, and the "pixelated" avocado takes this toast to the next level!

    Ingredients you'll need

    To make this recipe, you will need:

    • Bread - a slice of bread that's well-toasted for that perfect crunch.
    • Pesto - both store-bought and homemade pesto work great.
    • Avocado - half of an avocado, pitted and peeled.
    • Toasted sesame seeds - or sub for hemp seeds.
    • Fresh mint - this is optional, but adds a nice touch.

    How to make an avocado toast

    1. Toast the bread: Next, toast a slice of your favorite bread. This toast tastes great with both gluten-free and regular bread. You can use store-bought or homemade bread.
    2. Prep the avocado: Pit and peel the avocado. I use half of a small avocado for this recipe, but if you have a large avocado, you may want to use a quarter. If you want an artsy look, pixelate it by using a sharp paring knife. Otherwise, just create simple slices.
    3. Make your toast: Now it's time to make the avocado toast! Slather the toast with a layer of pesto. Top it with the avocado slices. Sprinkle with the toasted sesame seeds or hemp seeds and garnish with mint. Enjoy your toast!

    • ½ avocado
    • ¼ teaspoon toasted sesame seeds
    • sprig of fresh mint, optional
